Indian Chicken Pulao / Tahari – That One Pot Wonder & A Life Saviour

So this recipe of chicken pulao has been created one summer afternoon,when I literally ran out of all the ideas to make something good and delicious for her.It was one of those dreadful tantrum days,when she used to spit out every food that touches her lips.

Fried chicken in tomato base,加上少许克什米尔红辣椒,充满各种芳香的香料,与焦糖洋葱的甜味完美搭配,minced ginger,jeweled with cilantro,磨碎的胡萝卜,julienne of beetroot and handful of ghee roasted cashews,杏树,raisins.Only handful of pristine and fragrant basmati rice slathered in homemade ghee can match its temperament.

  • Chicken (with bone) : 500 gm
  • 香米:2杯
for marination
  • Curd:杯子
  • 姜汁:1汤匙
  • Kashmiri Red chilli powder : 1 tsp
  • 姜黄粉:1茶匙
  • 盐:2茶匙
  • Oil : 2 tbsp
  • Cinnamon stick - 1;月桂叶2;小豆蔻(大小):3-4;Cloves - 2-3
  • Black Pepper corn - 4-5;Kebab chini (long tail peppers,可选):4-5;Mace:1
  • 番茄泥(自制):1杯
  • Cumin powder : 1 tbsp
  • Garam masala powder (a large pinch)
  • Cashews,葡萄干,almonds : a handful
  • Grated carrots : 1 carrot
  • Julienne beetroot : 1 small beetroot
  • 焦糖洋葱:1杯
  • Minced ginger : 2 tbsp
  • Ghee (desi) : 2 tbsp
  • Sugar : 2 tbsp
  1. Wash and clean the chicken.Marinate it with ingredients listed under marination section.把鸡肉腌1小时。
  2. 清洁并清洗巴斯马蒂大米。把它倒在一个有细网的滤器里,放在一边,沥干所有的水。
  3. After that smear the basmati rice with large pinch of turmeric and 1 teaspoon sugar.Spread it on a wide dish and leave aside for 20 minutes.
  4. 干烤整个香料(在香料部分提到,except bay leaves) and gently crush them once or twice.
  5. Heat two tablespoon oil in a wide and deep pot.You can use pressure cooker too,但不要使用重量(或口哨)。
  6. Fry the chicken pieces till the rawness disappear.Sprinkle the roasted whole spices and continue frying the chicken for two more minutes.
  7. Add tomato puree,keep braising till the rawness of tomatoes are gone.
  8. Next add the spice powders - turmeric,Cumin和Garam Masala。Keep braising it for another 10 minutes on medium low heat.
  9. 在一个单独的锅里,heat one tablespoon ghee and roast the cashews,杏仁和葡萄干。加入香米,轻轻炒几分钟。把姜末拌在一起,保持分开。
  10. Add the rice to the chicken,add 4 cups water,salt to taste and sugar.
  11. Give a nice stir,cover with a tight lid and let it cook on medium heat till done.
  12. This will take around 20 minutes.
  13. 如果它变得非常干燥,洒点水,用叉子把它弄松。如果潮湿,揭开盖子,用小火烹饪,直到它变干一点。
  14. Drizzle the chicken pulao with ghee,stir in the caramelized onions,garnish it with grated carrots and julienne of beets.
  15. 服务温暖。
I also sometimes serve it with fried boiled eggs.

    Wonderful combination of spices for this recipe…Reminds me of the spicy biryani that I had a while ago…
